  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup BBQ sauce (your choice)
  • 4 cloves fresh garlic, minced
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup chopped bell peppers or pineapple chunks (optional)

Instructions

  1. Trim excess fat from the chicken breasts and pat dry.
  2. In a bowl, mix the BBQ sauce, minced garlic, onion powder, smoked paprika, salt, and pepper until smooth.
  3. Place the chicken in the bottom of your crockpot and pour the BBQ mixture on top. Gently coat all sides.
  4. Cover and cook on low for 6-7 hours or high for 3-4 hours until the chicken shreds easily with a fork.
  5. Remove the chicken, shred it with two forks, then return it to the pot and stir to combine.
