  • 8 corn tortillas (or 6 flour tortillas)
  • 2 cups red enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • ¼ cup fresh cilantro, chopped
  • ½ cup sour cream

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked, about 5–7 minutes.
  3. Drain excess fat and stir in desired taco seasoning.
  4. Place a tortilla on a flat surface, fill with beef mixture and sprinkle with cheese. Roll tightly and place seam-side down in a baking dish.
  5. Repeat with remaining tortillas. Pour red sauce over enchiladas and top with remaining cheese.
  6. Bake uncovered for 20 minutes until bubbly and golden brown.
  7. Let cool slightly, then garnish with cilantro and serve with sour cream.
