- 4 dried guajillo chiles
- 1 large onion, chopped
- 4 cloves garlic, minced
- 2 tsp ground cumin
- 1/4 cup fresh cilantro, chopped
- 8 corn tortillas (fresh)
- 1 lime, juiced
- 4 cups low-sodium beef broth
- 2 bay leaves
- 1 tsp dried oregano
- 1 tsp whole peppercorns
Instructions
- Prepare the chiles: Remove stems and seeds from guajillo chiles. Soak them in hot water for about 20 minutes until soft.
