  • 4 dried guajillo chiles
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tsp ground cumin
  • 1/4 cup fresh cilantro, chopped
  • 8 corn tortillas (fresh)
  • 1 lime, juiced
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • 1 tsp dried oregano
  • 1 tsp whole peppercorns

Instructions

  1. Prepare the chiles: Remove stems and seeds from guajillo chiles. Soak them in hot water for about 20 minutes until soft.
  2. Sauté onions and garlic: In a skillet over medium heat, sauté chopped onion until translucent. Add minced garlic and cook until golden brown.
  3. Blend the sauce: In a blender, combine soaked chiles, sautéed onion, garlic, cumin, oregano, and some beef broth; blend until smooth.
  4. Cook the beef: Place chuck roast in a slow cooker or pot with the blended sauce, remaining broth, bay leaves, and peppercorns. Cook on low for 6-8 hours or until fork-tender.
  5. Warm tortillas: Heat corn tortillas on a dry skillet until pliable; cover to keep warm.
  6. Assemble tacos: Shred the beef with two forks and fill each tortilla with meat. Top with chopped cilantro and squeeze fresh lime juice before serving.
