  • 1 packet taco seasoning (1 oz)
  • 2 cups shredded cheddar and Monterey Jack cheese blend
  • 1 cup diced bell peppers (mixed colors)
  • 6 large flour tortillas
  • 1 cup sour cream (for topping)
  • ¼ cup chopped green onions (for garnish)
  • 1 can (15 oz) tomato sauce
  • 1 tsp chili powder
  • Fresh cilantro (optional)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef until fully cooked; drain excess fat.
  3. Stir in taco seasoning, refried beans, and tomato sauce, allowing it to simmer for about 5 minutes.
  4. Grease a baking dish and layer half of the tortillas at the bottom.
  5. Spoon half of the beef mixture over the tortillas, followed by half of the cheese and bell peppers.
  6. Repeat layering with remaining ingredients.
  7. Bake for 25-30 minutes until bubbly and golden brown on top.
  8. Let cool slightly before serving; top with sour cream and green onions.
