- 3–4 boneless, skinless chicken breasts
- 1 cup plain yogurt
- 2 tbsp fresh ginger, minced
- 4 garlic cloves, minced
- 1 can (14 oz) whole peeled tomatoes
- 1 cup coconut milk or heavy cream
- 2 tbsp unsalted butter
- Juice of 1 lemon
- 1 tsp cumin
- 1 tsp coriander
- 2 tsp garam masala
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- In a large bowl, mix yogurt with minced garlic and ginger. Add spices and combine well before adding chicken pieces. Marinate for at least 30 minutes.
- Heat butter in a large skillet over medium heat until melted. Add marinated chicken pieces and sear until golden brown on all sides (about 5-7 minutes).
- Pour canned tomatoes into the skillet along with coconut milk or cream. Stir well and simmer for about 20 minutes until thickened.
- Taste the sauce after simmering; add lemon juice, salt, and pepper to taste. Adjust spices based on preference.
- Once cooked through, garnish with chopped cilantro and serve over fluffy basmati rice or warm naan bread.
