  • 1 lb lean ground beef
  • 1 medium onion, chopped
  • 1 cup bell peppers (mixed colors), diced
  • 1 cup provolone cheese, shredded
  • 10 egg roll wrappers
  • Salt and pepper to taste
  • Oil for frying (enough to submerge the eggrolls)

Instructions

  1. Heat a skillet over medium heat. Add ground beef and cook until browned. Stir in onions and bell peppers; cook until softened.
  2. Remove from heat and stir in provolone cheese until melted.
  3. Lay an egg roll wrapper flat, spoon about 2 tablespoons of filling onto the center. Fold the bottom corner over the filling, then fold in the sides tightly, rolling upwards to seal.
  4. Heat oil to 350°F (175°C) in a deep pot. Fry eggrolls in batches for about 3-4 minutes per side or until golden brown. Drain on paper towels.
  5. Serve hot with your favorite dipping sauce.
