  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 2 large eggs
  • 2 tbsp sugar
  • Salt & pepper to taste
  • Cooking oil for frying (canola or peanut)
  • Maple syrup for serving

Instructions

  1. Marinate chicken breasts in buttermilk mixed with salt and pepper for at least 30 minutes.
  2. In one bowl, whisk flour, baking powder, salt, and pepper. In another bowl, beat eggs with sugar until frothy.
  3. Heat oil in a skillet over medium-high heat. Dredge marinated chicken in the flour mixture and fry until golden brown (6-7 minutes per side).
  4. For the waffles, mix flour, baking powder, sugar, salt, eggs, and milk in another bowl until smooth.
  5. Preheat the waffle iron and pour batter until slightly overflowing; close to cook until golden.
  6. Assemble by placing crispy chicken on fluffy waffles and drizzle with maple syrup.
