- 3–4 boneless, skinless chicken breasts (cooked and shredded)
- 2 cloves fresh garlic (minced)
- 8 flour tortillas
- 1 can (10 oz) enchilada sauce (mild or spicy)
- 2 cups shredded cheese (mix of cheddar and Monterey Jack)
- 1 cup sour cream (or Greek yogurt)
- 1 cup bell peppers (diced)
- 1 onion (diced)
- Fresh cilantro for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, sauté the diced onion and bell pepper in a splash of oil until softened, about 5 minutes. Add minced garlic and cook for an additional minute.
- In a large mixing bowl, combine cooked shredded chicken with half of the enchilada sauce.
- In a baking dish, layer tortillas at the bottom. Spread half of the chicken mixture over the tortillas, followed by half of the remaining enchilada sauce and half of the shredded cheese. Repeat layers.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 10-15 minutes until bubbly and golden brown.
- Let it sit for a few minutes before serving. Optionally top with fresh cilantro.
