- 8 corn tortillas
- 2 cups green enchilada sauce
- 1 cup shredded sharp cheddar cheese

- ¼ cup chopped fresh cilantro
Instructions
- Preheat your oven to 375°F (190°C). Boil salted water in a large pot and cook the chicken for 15-20 minutes until fully cooked. Let cool and shred.
- In a skillet over medium heat, sauté minced garlic in olive oil until fragrant (about 1 minute).
- In a bowl, mix shredded chicken with sautéed garlic and half of the green enchilada sauce.
- Fill each tortilla with about two tablespoons of the chicken mixture, roll tightly, and place seam-side down in a baking dish.
- Pour remaining green enchilada sauce over the tortillas and sprinkle with cheddar cheese.
