- 3–4 boneless, skinless chicken breasts (about 1 lb), diced
- 8 oz lo mein noodles
- 1 cup bell peppers, sliced
- 1 cup broccoli florets
- 1 cup carrots, sliced
- 4 cloves garlic, minced
- ¼ cup low-sodium soy sauce
- 2 tsp sesame oil
- 1 tbsp cornstarch
- ½ cup low-sodium chicken broth
Instructions
- Prepare your ingredients by chopping vegetables into bite-sized pieces.
- In a large skillet over medium-high heat, add oil and cook the diced chicken until golden brown (5-7 minutes).
- Add minced garlic and chopped vegetables to the skillet. Stir-fry for another 3-4 minutes until the veggies are crisp.
