  • 34 boneless, skinless chicken breasts (about 1 lb), diced
  • 8 oz lo mein noodles
  • 1 cup bell peppers, sliced
  • 1 cup broccoli florets
  • 1 cup carrots, sliced
  • 4 cloves garlic, minced
  • ¼ cup low-sodium soy sauce
  • 2 tsp sesame oil
  • 1 tbsp cornstarch
  • ½ cup low-sodium chicken broth

Instructions

  1. Prepare your ingredients by chopping vegetables into bite-sized pieces.
  2. In a large skillet over medium-high heat, add oil and cook the diced chicken until golden brown (5-7 minutes).
  3. Add minced garlic and chopped vegetables to the skillet. Stir-fry for another 3-4 minutes until the veggies are crisp.
  4. In a bowl, mix soy sauce, sesame oil, cornstarch, and chicken broth until smooth. Pour over the chicken and vegetables in the skillet.
  5. Finally, add cooked lo mein noodles and toss everything together for about 2 minutes until well coated.
