Instructions
- In a large bowl, combine flour, instant yeast, sugar, and salt.
- Gradually add warm milk while mixing until a shaggy dough forms; knead on a floured surface for about 5 minutes until smooth.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Shape cold butter into a thin rectangle between parchment paper; refrigerate until firm.
- Roll out the chilled dough into a large rectangle and place the butter slab in the center; fold over each side like an envelope to encase it.
- Roll out the dough again and fold into thirds; repeat this rolling-and-folding process three times.
- Roll out one last time, cut triangles, place chocolate chips at the base, and roll up tightly.
- Preheat oven to 425°F (220°C) and arrange croissants on baking sheets lined with parchment paper; bake for 15-20 minutes until golden brown.
