This dish simmers in a savory broth, creating an irresistible aroma that evokes memories of cozy gatherings and festive celebrations. Perfect for family dinners or weeknight meals, this recipe is easy to prepare and allows for delicious variations with leftovers.

Ingredients

Scale
  • 3 lbs corned beef brisket
  • 1 medium head green cabbage (cut into wedges)
  • 4 large carrots (peeled and cut into chunks)
  • 4 Yukon Gold potatoes (quartered)
  • 1 large sweet onion (chopped)
  • 2 tbsp pickling spice
  • 4 cups low-sodium beef broth or water

Instructions

  1. Rinse the corned beef under cold water to remove excess salt. Place it in a large pot.
  2. Add the beef broth until the brisket is covered by about an inch, then toss in chopped onions and pickling spices.
  3. Bring to a boil over medium heat, then reduce heat to low, cover, and simmer for 2-3 hours until fork-tender.
  4. Add the carrots, potatoes, and cabbage wedges; cover and cook for an additional 30-45 minutes until veggies are tender.
  5. Let the meat rest for 10-15 minutes before slicing against the grain.
