  • 2 lbs chuck roast
  • 4 dried guajillo peppers
  • 1 large yellow onion, chopped
  • 4 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 bay leaves
  • 1 cup fresh cilantro, chopped (for garnish)
  • 4 cups beef broth
  • Juice of 2 lime wedges

Instructions

  1. Prepare your ingredients by chopping onions and garlic and removing stems from dried guajillo peppers.
  2. Blend the soaked guajillo peppers with onion, garlic, cumin, bay leaves, and beef broth until smooth.
  3. Rub the chuck roast generously with salt and pepper. Sear in a hot skillet until browned on all sides.
  4. Place the seared meat into your crockpot and pour the blended sauce over it. Add additional beef broth if needed.
  5. Cook on low for about 8 hours until the meat is tender and shreds easily.
  6. Shred the meat directly in the pot and serve it in bowls or tacos topped with fresh cilantro and lime juice.
