  • 34 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup creamy green salsa (salsa verde)
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded Queso Fresco
  • 8 corn or flour tortillas
  • ½ cup sour cream
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Boil salted water in a large pot and cook the chicken until it reaches an internal temperature of 165°F (about 15-20 minutes).
  2. Shred the cooked chicken in a bowl and mix in the spinach until wilted. Add half of the salsa and stir well.
  3. Spoon filling onto each tortilla, roll tightly, and place seam-side down in a greased baking dish. Pour remaining salsa over the top.
  4. Sprinkle shredded cheese generously over the enchiladas and bake uncovered for about 20 minutes or until bubbly and golden brown.
  5. Allow to cool slightly, then garnish with sour cream and fresh cilantro before serving.
