  • 34 lbs beef chuck roast
  • 4 cups low-sodium beef broth
  • 4 sturdy French rolls
  • 1 large yellow onion, sliced
  • 3 cloves garlic, minced
  • 2 tsp fresh thyme (or 1 tsp dried)
  • 1 tsp whole black peppercorns, crushed
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear the beef chuck roast on all sides until browned (about 4-5 minutes per side).
  2. Remove the beef and add onions and garlic to the pot, cooking until onions are translucent (about 5 minutes).
  3. Pour in 1 cup of beef broth to deglaze the pot, scraping up any flavorful bits.
  4. Return the beef to the pot along with thyme and peppercorns. Add enough beef broth to cover ¾ of the roast.
  5. Bring to a boil, then reduce heat to low and cover. Simmer for 3-4 hours or until fork-tender.
  6. Slice the beef against the grain and serve on toasted French rolls with warm au jus for dipping.
