- 1 cup all-purpose flour
- ½ cup cornmeal (medium grind)
- 1 tsp baking powder
- 2 large eggs
- ½ cup buttermilk
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp paprika
- Oil for frying (enough to cover the bottom of the skillet)
Instructions
- Prepare your workstation with three shallow bowls: one with flour mixed with salt and paprika, one with beaten eggs and buttermilk, and another with cornmeal.
- Drain and pat dry the pickle chips to remove excess moisture.
- Dip each pickle chip into the seasoned flour, then into the egg mixture, and finally coat it thoroughly in cornmeal.
- Heat oil in a deep skillet to 350°F (175°C). Test readiness by dropping in a small piece of bread; it should sizzle immediately.
- Fry coated pickles in batches for about 3-4 minutes per side until golden brown. Remove and drain on paper towels.
