- 4 cups day-old rice
- 1 cup mixed fresh vegetables (bell peppers, peas, carrots)
- 2 large eggs
- 3 tbsp low-sodium soy sauce
- 2 cloves garlic (minced)
- 2 green onions (sliced)
- 1 tbsp sesame oil
Instructions
- Prepare ingredients: Chop vegetables into bite-sized pieces.
- Cook chicken: Heat 1 tbsp oil in a large skillet over medium-high heat. Add diced chicken and cook for 5-7 minutes until golden brown.
- Add garlic & vegetables: Stir in minced garlic and chopped vegetables, cooking for another 3-4 minutes.
- Incorporate rice & eggs: Add day-old rice, breaking up clumps. Push mixture to one side; scramble eggs on the other side until just set, then mix everything together.
- Season & finish: Drizzle soy sauce and sesame oil over the mixture, tossing until well combined. Heat through for an additional 2-3 minutes.
