Ingredients

Scale
  • 1 cup unsalted butter, room temperature
  • 3/4 cup granulated sugar
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp vanilla extract
  • 1/2 cup fruit jam (raspberry, apricot, or strawberry)

Instructions

  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Stir in the vanilla extract until well combined.
  4. In another bowl, whisk together the flour, baking powder, and salt. Gradually add this to the butter mixture until just combined.
  5. Scoop tablespoon-sized portions of dough, roll into balls, and place them on the baking sheets about two inches apart. Use your thumb to make an indent in each ball.
  6. Fill each indent with your chosen jam without overflowing.
  7. Bake for 12-15 minutes until lightly golden around the edges. Allow to cool before serving.
