- 1/2 cup Caesar dressing (120ml)
- 1/2 cup freshly grated Parmesan cheese (50g)
- 1 cup homemade croutons (about 40g)
- 2 tbsp freshly squeezed lemon juice (30ml)
- 2 cups stale bread, cubed (about 100g)
- 2 tbsp extra virgin olive oil (30ml)
- 1 tsp garlic powder (5g)
Instructions
- Wash the kale thoroughly under cold water, remove tough stems, and tear leaves into bite-sized pieces.
- For the croutons, preheat your oven to 375°F (190°C). Toss stale bread cubes with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and bake for 15-20 minutes until golden brown.
- In a bowl, whisk together Caesar dressing and lemon juice until combined.
- In a large bowl, combine torn kale and half of the Parmesan cheese. Pour over the dressing and toss until well-coated.
- Top with remaining Parmesan cheese and baked croutons; toss gently.
- Serve immediately in plates or bowls for maximum freshness.
