- 2 cups fresh broccoli florets
- 2 cups shredded mozzarella cheese
- 1 cup crushed tomatoes
- 1 cup low-sodium vegetable broth
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C) and lightly coat a 9×13-inch baking dish with non-stick spray or olive oil.
- Cook the pasta until al dente, drain, and set aside.
- In a skillet, sauté onion and garlic in olive oil until softened (3-5 minutes).
- In a large bowl, combine crushed tomatoes, vegetable broth, basil, oregano, salt, and pepper. Stir in cooked pasta and broccoli until evenly coated.
- Transfer the mixture to the baking dish and top with shredded mozzarella cheese.
- Cover with aluminum foil (shiny side down) and bake for 30 minutes. Remove the foil halfway through to let the cheese bubble.
- Allow to cool slightly before serving.
