  • 2 tablespoons olive oil
  • 1 pound boneless chicken thighs, diced
  • 8 ounces chorizo sausage, sliced
  • 1 cup shrimp, peeled and deveined
  • 1 teaspoon saffron threads
  • 1 bell pepper, chopped (red or green)
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 4 cups low-sodium chicken broth
  • 1 cup frozen peas

Instructions

  1. Prep the ingredients: Chop your veggies and measure spices.
  2. Sauté the base: In a large skillet, heat olive oil over medium heat. Add onions and garlic; sauté until soft.
