- 1 green bell pepper, chopped

- 4 cups vegetable broth
- Salt & pepper to taste
- Chopped green onions for garnish
Instructions
- Soak dried beans overnight; drain.
- In a large pot, heat oil over medium heat. Sauté onion and bell pepper until soft (about 5 minutes). Add garlic and sauté until fragrant.
- Stir in soaked beans (or canned), cumin, and smoked paprika.
- Pour in broth and bring to a boil; reduce to simmer for 45 minutes (20 minutes for canned).
- Cook rice according to package instructions.
- Serve red beans over rice, garnished with green onions.
