Ingredients

  • 1 cup dried red beans (or 2 cans, drained)
  • 1 cup long grain rice
  • 1 medium yellow onion, chopped
  • 1 green bell pepper, chopped
  • 3 cloves garlic, minced
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 4 cups vegetable broth
  • Salt & pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Soak dried beans overnight; drain.
  2. In a large pot, heat oil over medium heat. Sauté onion and bell pepper until soft (about 5 minutes). Add garlic and sauté until fragrant.
  3. Stir in soaked beans (or canned), cumin, and smoked paprika.
  4. Pour in broth and bring to a boil; reduce to simmer for 45 minutes (20 minutes for canned).
  5. Cook rice according to package instructions.
  6. Serve red beans over rice, garnished with green onions.
