Ingredients

  • 12 oz spaghetti
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic, minced
  • 28 oz canned whole peeled tomatoes
  • 1/4 cup fresh basil leaves, chopped
  • Salt and pepper to taste
  • 1/2 cup freshly grated Parmesan cheese

Instructions

  1. Cook spaghetti in a large pot of salted boiling water until al dente (8-10 minutes). Drain and reserve some pasta water.
  2. In a separate pan, heat olive oil over medium heat. Add minced garlic and sauté until golden (1-2 minutes).
  3. Crush canned tomatoes by hand or with a fork and add them to the pan. Simmer for about 15 minutes, stirring occasionally.
  4. Season sauce with salt and pepper. Stir in fresh basil just before serving.
  5. Combine cooked spaghetti with sauce in the pan, adding reserved pasta water if needed for desired consistency.
  6. Serve topped with Parmesan cheese and more basil if desired.
