Description

Ingredients

  • 12 jumbo pasta shells
  • 1 cup ricotta cheese
  • 2 cups fresh spinach (cooked)
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and coat a baking dish with nonstick spray.
  2. Boil salted water and cook the jumbo shells until al dente, about 8 minutes; drain and set aside.
  3. Sauté spinach in olive oil over medium heat until wilted (about 2 minutes).
  4. In a bowl, mix cooked spinach, ricotta, half the mozzarella, garlic powder, salt, and pepper until well combined.
  5. Stuff each shell with the filling generously.
  6. Spread half of the marinara sauce in the baking dish; place stuffed shells on top and cover with remaining sauce and mozzarella.
  7. Cover with foil and bake for 25 minutes; remove foil and bake for an additional 10 minutes until bubbly.
