  • 1/4 cup melted butter

Instructions

  1. Preheat oven to 375°F (190°C). Grease an 8-inch square baking pan.
  2. Boil sweet potatoes until tender, about 15 minutes, then mash until smooth.
  3. In a large bowl, whisk together cornmeal, flour, baking powder, sugar, and salt.
  4. Create a well in the dry mixture and add mashed sweet potatoes, eggs, milk, and melted butter. Stir until just combined.
