- 4 large Russet potatoes
- 4 tbsp unsalted butter
- ½ cup heavy cream
- 1 cup sharp cheddar cheese, shredded

Instructions
- Preheat oven to 400°F (200°C). Scrub potatoes and poke holes in them with a fork.
- Bake potatoes on the oven rack for 45-60 minutes until fork-tender.
- Once cool, slice each potato in half lengthwise and scoop out insides into a bowl.
