Description

Ingredients

  • 1 lb ground beef (80/20)
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1/2 cup ketchup (plus extra for topping)
  • 1/2 cup finely chopped onion
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Optional: 1/2 cup finely chopped bell peppers or carrots

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
  2. Sauté onions (and any optional veggies) in a skillet over medium heat for about 5 minutes until softened.
  3. In a large bowl, mix ground beef, sautéed vegetables, breadcrumbs, eggs, ketchup, garlic powder, oregano, salt, and pepper until just combined.
  4. Scoop the mixture into the muffin tin cups, filling them three-quarters full.
  5. Drizzle extra ketchup on top of each muffin before baking.
  6. Bake for 25-30 minutes until the internal temperature reaches 160°F (71°C). Allow to cool slightly before serving.
