- 1 cup breadcrumbs
- 2 large eggs
- 1/2 cup ketchup (plus extra for topping)
- 1/2 cup finely chopped onion
- 1 tsp garlic powder
- 1 tsp dried oregano
- Salt and pepper to taste
- Optional: 1/2 cup finely chopped bell peppers or carrots
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- Sauté onions (and any optional veggies) in a skillet over medium heat for about 5 minutes until softened.
- In a large bowl, mix ground beef, sautéed vegetables, breadcrumbs, eggs, ketchup, garlic powder, oregano, salt, and pepper until just combined.
- Scoop the mixture into the muffin tin cups, filling them three-quarters full.
- Drizzle extra ketchup on top of each muffin before baking.
- Bake for 25-30 minutes until the internal temperature reaches 160°F (71°C). Allow to cool slightly before serving.
