- 4 dried ancho chiles
- 4 dried guajillo chiles
- 4 garlic cloves
- 1 tsp cumin seeds
- 1 medium yellow onion, diced
- 3 cups low-sodium beef broth
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Prepare the chiles by removing stems and seeds; toast them in a dry skillet over medium heat for 2-3 minutes until fragrant.
- Blend toasted chiles, garlic, cumin seeds, and 1 cup of beef broth until smooth; add more broth if needed.
- In a large pot, heat olive oil over medium-high heat; season beef chunks with salt and pepper and brown on all sides.
- Add diced onion to the pot; cook until translucent (about 5 minutes).
- Pour the blended sauce over the beef and onions; add remaining beef broth and bring to a simmer.
- Cover and simmer on low heat for 2-3 hours until meat is fork-tender.
