  • 1/4 cup olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 3 sprigs fresh rosemary
  • 3 sprigs fresh thyme
  • 1 lemon, sliced
  • 2 garlic bulbs
  • 2 cups chopped carrots and onions (for roasting)

Instructions

  1. Preheat oven to 325°F (165°C). Pat turkey dry with paper towels.
  2. Rub olive oil over the turkey; season generously with salt and pepper, including inside the cavity.
  3. Stuff cavity with rosemary, thyme, lemon slices, and garlic bulbs.
  4. Place turkey on a roasting rack in a pan. Roast for approximately 13-15 minutes per pound until internal temperature reaches 165°F (75°C).
  5. Baste every 30 minutes with pan juices for moisture.
  6. Let the turkey rest for 20-30 minutes before carving.
