- 2 lbs beef chuck roast, cut into 1-inch cubes
- 4 medium carrots, sliced thick
- 4 medium Yukon Gold potatoes, cubed
- 1 large yellow onion, diced
- 4 cloves garlic, minced
- 4 cups low-sodium beef broth
- 1 cup red wine
- 2 tsp olive oil
- 2 sprigs fresh thyme
- 2 bay leaves
- Salt and pepper to taste
Instructions
- In a large Dutch oven, heat olive oil over medium-high heat. Pat the beef dry and season with salt and pepper. Sear all sides until browned.
- Remove the beef and set aside. In the same pot, sauté onions and garlic until translucent.
- Add carrots and potatoes; stir for about 5 minutes.
- Pour in red wine, scraping up brown bits from the pot. Add beef broth, thyme, and bay leaves; bring to a simmer.
- Return the beef to the pot, cover with a lid, and reduce heat to low. Simmer for 2-3 hours until meat and veggies are tender.
- Adjust seasoning before serving; remove thyme and bay leaves.
