Ingredients

  • 1 lb ribeye steak
  • 1 medium onion, sliced
  • 1 cup bell peppers (mixed colors), sliced
  • 4 oz provolone cheese
  • 4 hoagie rolls
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Thinly slice the ribeye against the grain.
  2. Heat 1 tbsp olive oil in a skillet over medium heat. Sauté onions and bell peppers for 5-7 minutes until soft.
  3. Push veggies to one side, add another tbsp of olive oil, then add ribeye slices. Season with salt and pepper; cook for 3-4 minutes until browned.
  4. Layer provolone cheese on top of the steak and cover with a lid until melted.
  5. Scoop the mixture onto hoagie rolls and serve immediately.
