  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, rinsed
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup bell peppers, diced (any color)
  • 2 cups tortilla chips
  • 2 cups shredded cheddar cheese
  • ½ cup sour cream (for serving)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium-high heat, brown the ground beef until cooked through. Drain excess fat.
  3. Stir in the taco seasoning and a splash of water; simmer until fragrant.
  4. In a baking dish, layer half of the tortilla chips at the bottom.
  5. Add half of the beef mixture, followed by black beans, corn, and half of the cheese.
  6. Repeat layers with remaining ingredients, finishing with cheese on top.
  7. Bake for 25-30 minutes until bubbly and golden brown.
  8. Let cool slightly before serving with sour cream.
